Silky smooth and creamy chocolate pudding! What a better way to start the day, right??? I think so! And most importantly, so do the kids!!!
Now, before you go bashing me for my parental choice for what to feed my kids for their most important meal of the day, here me out :)
I love looking for ways to get more whole foods and vegetables into my children/family. I believe a whole foods make for whole (healthy) bodies and health is a key to a good life. But as we all know, getting kids to eat whole/healthy foods is not always an easy thing to do. Thanks to a local mom that I recently met, I was introduced to a new recipe that I am loving! Chocolate Banana Pudding. No processed sugar. No dairy or eggs (so if your diet is excluding dairy and eggs for one reason or another, this should make you happy) and if you are going totally vegan, you can easily make this to fit what you need.
This is how I made our pudding:
4 very ripe bananas
4 ripe avocados
6-8 Tbsp of dark cocoa powder (it depends on your taste buds for this one)
Local raw honey
A Tbsp of Truvia (mainly to cut some of the bitterness of the cocoa powder)
And while this last ingredient isn't "healthy", I only used maybe 1/2. Simi-sweet chocolate morsels. I know that there are gluten free and vegan friendly chocolates on the market but we're working on a very limited income so that is not an option for us. We just don't eat a lot of them and it really went well with the pudding. The kids liked having "candy" to eat first thing in the morning LOL!
They didn't have fun eating this and playing in it at all. Camera = goofy play time. And it was so fun! Making memories and staying healthy and having a good time with it too. That's a good life!
